Bento #6: Shrimp Sushi!

Last night was a bit like Christmas. I couldn't sleep, I was so excited about this bento. It was my first attempt at sushi, and I could not wait to taste it. Between the rolls and my baby blue origini (made with natural food coloring I bought at Whole foods ages ago), it was going to be a fantastic lunch!

The bento is a bit higher in non-net carbs than normal, but I thought the sheer excitement of being able to eat sushi again more than made up for it. I am currently doing induction again, and this fit in fine with it, and the higher fiber count is always good for me!

Origini stuffed with bacon
Hot dog "flowers" using half of a Hebrew National 1 carb dog
roast beef rolls with a julienned snow pea
2 pieces of shrimp
mixed baby greens

Bento #5: Salmon Fingers


Today's lunch was one of my favorites. Salmon Fingers, with sugar snap peas, cauliflower rice and roasted shrimp. To make the salmon fingers, I simply sliced up a salmon fillet, rubbed a bit of mayo on the pieces and fried them in a bit of oil on the stove top. The shrimp was done in my toaster oven while I did that, and the rice was pre-made.

Fiber: 2.7
Net Carbs: 5.3

Bento #4: Green Goddess Tuna


I realize I haven't blogged in a bit. My health took a turn for the worse, and it took me a bit to catch back up with my internet use. I have, however, continued to work on my bento lunches, and I was even able to purchase a new bento box. I got it at a local store called Value City. It was a whole dollar, which excited me a bit too much. It's a dual level box and it's very nice to have, and for the price, I can't beat it.



Today's lunch was Green Goddess Tuna on baby greens (recipe at Low Carb Foodie), roast beef, sugar snap peas and a mozzarella string cheese.
